Chef Khadija

Khadija has cooked at Riad Dar Alhambra for more than fifteen years. She is the head cook of the house — the same hands, in the same kitchen, for fifteen years.

Her cooking is delicate and original Moroccan, made with organic ingredients. It is home cooking in the sense that matters: slow, particular, and made for the number of people actually sitting down, rather than hotel cooking scaled for a dining room.

One dish on the menu carries her name. The mousse au chocolat façon Khadija is printed that way on the card, which tells you roughly how long guests have been asking for it.

Seven suites means the table is small. That is the point — dinner is cooked for the house, not for a restaurant.

What dinner is

A three-course dinner, cooked in the house

Dinner is a set three-course menu, priced per person — a starter, a main and a dessert, each chosen from the card below. It is cooked to order, so it is not a buffet and it does not run to a fixed sitting time.

You eat on the rooftop terrace or in the courtyard. Your choice, and in practice most people choose the roof once the heat has gone out of the day. Tell us during your stay and we will lay a table.

Dinner is for house guests. The riad is not a public restaurant — there are seven suites and one kitchen, and the table is laid for the people staying in them. If you are not staying with us, we are not able to seat you.

Vegetarians: the vegetable tagine, the Moroccan salads, the cream of zucchini and the briouates make a full three courses without asking for anything special. Anything else — allergies, children eating early, something you simply do not like — tell us and Khadija will work around it.

Every morning

Breakfast, wherever you want it

Breakfast is included in every rate and it is made in the riad each morning.

It is served wherever you would like it — on the rooftop under the bougainvillea, at a table in the courtyard beside the fountain, or in your own room if you would rather not see anybody yet. Tell us the night before, or just say so when you come down.

Expect Moroccan pastries and breads, crepes, fruit, eggs, jams and juice, with mint tea or coffee.

When you first arrive there is mint tea and a plate of Moroccan pastries waiting, whatever time you get in.

Cooking with Khadija

A cooking session with Chef Khadija can be arranged on request — how a tagine is actually built, what goes into the spice mix, why the salads are dressed the way they are.

It does not run to a fixed schedule or a fixed format, so ask us and we will tell you what is possible for your dates.

Before you ask

Can I eat here if I am not staying at the riad?
No. Riad Dar Alhambra is not a public restaurant — the table is laid for house guests only. There are seven suites and one kitchen, and Khadija cooks for the people staying in them.
How much is dinner?
Price is on request. Ask when you enquire about your stay, or at reception once you are here, and we will give you the price per person before you commit to anything.
Is breakfast included?
Yes. Moroccan breakfast is included in every rate, made in the riad each morning, and served on the rooftop, in the courtyard or in your room — wherever you prefer.
Is there a vegetarian option?
Yes, and not as an afterthought. The vegetable tagine, the Moroccan salads, the cream of zucchini and the briouates make a full three courses. Tell us about allergies or anything else when you book.
Where is dinner served?
On the rooftop terrace or in the courtyard, whichever you prefer on the night. The roof is the usual answer once the sun is down.
Do I need to arrange dinner in advance?
Just tell us during your stay and we will lay a table. Because everything is cooked to order rather than held on a buffet, the earlier in the day you mention it, the easier it is.
